Pancit Canton


Pancit Canton is one of the favorite noodle recipes which the Chinese immigrants in the early times introduced to the Filipinos. Since then it has found its place in a Filipino kitchen either as a simple meal or in big occasions such as fiestas. The main ingredient is the noodles. The other ingredients such as pork or chicken or shrimps adds flavor to this dish while the vegetables not only add nutrients but makes it colorful.

PANCIT  CANTON

¼ k. shrimps
1 chicken breast, cut in strips
1 onion, chopped
2 cloves garlic, crushed
¼ k. lean pork, cut in strips
5 pcs. chicken liver
2 tsps. salt
1 tsp. msg
1 pkg. pancit canton (dried Chinese noodles)
2 tbsps. soy sauce
1 ½ c. broth
1 carrot, cut in strips
1 head cauliflower or broccoli, cut into flowerettes
4 cabbage leaves, shredded
¼ c. chicharo or pea pod
1/3 c. green onions, chopped finely
2 tbsps. cornstarch, disperse in water



Peel shrimps leaving tail and slice chicken breast. Saute garlic, onion, pork, chicken liver, shrimps and chicken meat. Season with salt, msg and soy sauce. Pour broth and bring to a boil. Add all the vegetables. Thicken with dispersed cornstarch. Stir canton and cook for 10 minutes or until noodles is just the right softness. Serve hot.

Apple Kuchen


Kuchen means cake in Germany. It is a cake made from a sweet dough and most often topped with fruit, with or without a custard topping and baked. The most common topping for kuchen is apples because it can be found almost everywhere around the globe. Apply Kuchen has found a place in the Filipino palate.

APPLE  KUCHEN

½ c. fresh butter
1-3/4 c. sugar
2 ½ c. cake flour
2 tsp. baking powder
2 tsp. cinnamon
2 pcs. eggs
1 c. milk
1 c. shredded cheese
4 pcs. apples


Reserve ¼ cup sugar to mix with the cinnamon. Cream butter , add sugar, well- beaten eggs and flour. Pour on baking pan. Slice apples half crosswise. Arrange in standing position. Spread sugar with  cinnamon on top. Bake until done.

Tossed Green Salad



Making a tossed green salad seem so easy - wash, dress and toss. But there more to make it a perfect tossed green salad like those served in expensive restaurants. Choose the fresh and green vegetables (preferably organic) you can find for a  great green salad.

TOSSED  GREEN  SALAD

1 cup lettuce
1 cup string beans, cooked and drained
1 peeled onion, sliced
1 hard-boiled egg, sliced
½ cup kalamansi or lemon juice
3 tomatoes
2 cups diced, cooked potatoes
¼ tsp. sugar
1 tsp. salt
½ tsp. vetsin or msg

Wash the lettuce, separating the leaves. Arrange in salad bowl. Arrange alternate layers beans, tomatoes cut in eights, potatoes and onion. Thoroughly toss the salad with a dressing made by beating together with fork the remaining ingredients, garnish with hard-cooked eggs.

Chicken And Pork Adobo


Adobo is the all-time favorite Filipino dish. Each household has its own version of adobo depending on its taste preference. It's main ingredient  can either be pork or chicken or both as the recipe below. What makes it flavorful is the combination of vinegar (or calamansi juice) and soy sauce.

CHICKEN AND PORK  ADOBO

1 c. native vinegar           
1 head garlic, crushed           
½ tsp. black pepper           
2 tsps. rock salt           
1-4 tbsps. soy sauce               
1 ½- 2 c. water               
1 chicken (about 500 gms.) cut up
½ k. pork, cut into 1” x 2”
1 bay leaf ( optional)
1 tbsp. sugar
A slice of pork liver, cut into 1” x 2” (optional)
Oil for frying


Combine vinegar, garlic, pepper, bay leaf, rock salt and soy sauce in a mixing bowl. Put in chicken, pork and liver. Let soak for 20-30 minutes. Brown garlic in cooking oil in a sauce pan or wok and add the pork first since this takes time to tenderize. Add marinade (liquid used to marinate the meat) and water and simmer until pork is almost tender. Add the chicken and liver and continue cooking until sauce thickens. Served garnished with onion rings.

Beef Caldereta




Beef Caldereta or Beef Stew is one of the favorite Filipino dishes. This recipe uses beef as its mean ingredient and flavored with tomato sauce. You can also use pork or chicken but the real and original calderita is made with goat meat. This recipe is usually present during occasions such as birthdays and fiestas.


BEEF CALDERETA


½ k beef round, cut in serving pieces       
¼ c vinegar               
10 pcs. peppercorn, crushed       
1 tsp. salt                 
2 cloves garlic, crushed       
¼ c. cooking oil           
1/3 c. liver spread
1 c. onion, sliced
½ c. tomato sauce
1 ½ c. boiling water
1 c. red or green pepper, cut in strips
1 pc. laurel or bay leaf
2 pcs. medium size potato, cut in eighth and fried
1 small carrot, cubed
Dash of hot sauce

Marinate beef in mixture of vinegar, peppercorn, salt and crushed garlic for ½ hour. Fry pieces of beef in cooking oil. Add onions and sauté until tender. Pour in  tomato sauce and boiling water. Add the green pepper, bay leaf and hot sauce as desired. Cover and simmer until meat is tender. Blend in liver spread and fried potatoes. Cook 5 minutes more. Serve 5.

Potato Salad


Potato salad is a dish made from boiled potatoes. Though called a salad, it is generally a side dish, as it usually accompanies the main course. It comes in different version and is seasoned to taste differently in other parts of the world.

Here is a basic recipe you can follow, but you can add other ingredients like diced singkamas, carrots, or apple (I like this because it makes it crunchy). You can also add raisins, pineapple chunks, diced ham or cheese for a different taste and also all-purpose cream for a more creamier salad.

POTATO SALAD

5 medium pared, cooked potatoes
1 tsp. salt
2 tbsps. chopped green onion
2 tbsps. chopped pimiento
3 hard boiled eggs
1 ¼ cup mayonnaise
¼ cup diced celery

Dice potatoes and sprinkle with salt. Add remaining ingredients and mix gently. Season to taste with salt and msg or vetsin. Chill two hours. Make 8 servings.

Vegetable Chowder


Chowder is a vegetable or seafood stew usually eaten with saltine crackers. Chowder is usually cooked with milk or cream and thickened with broken up crackers, but some recipes are traditionally thickened with mashed potatoes, ground rice or cornstarch.

Here is a delicious vegetable chowder that is easy to prepare:

VEGETABLE CHOWDER

2 tbsp. oil
1 c diced celery
1 c diced carrots
1 small onion, grated
1 ½ c cooked or canned corn
½ c water
1tsp salt
celery salt
1 tsp sugar
2 c evaporated milk
2 c water
1 c cooked peas
2 tbsp chopped parsley
Grated cheese

Heat the oil, add the onion, celery, carrots, corn, water, salt, celery salt and sugar. Cover until cooked, add milk and peas. Heat. Add, parsley, Sprinkle with cheese.
